Does it change the real text or just cover it over?
It changes the real text. You click the existing characters, remove them and type the replacement in the same spot, so the substitution becomes part of the document rather than a sticky note laid on top.
Can I change a name or number that appears in several places?
Yes, but each occurrence is edited individually — click each instance and retype it. There is no global find-and-replace, so for a name that recurs on many pages you swap them one at a time.
What if my new wording is longer than the old text?
You can resize or reposition the edited text so it fits the line. On a tight layout you may need to nudge nearby words a touch, but the text stays fully editable while you get it right.
